Mexican Rice with Chips and Salsa.

Mexican rice is simple to make, yet packed with zesty flavors. 

This rice is loaded with beans and peppers. I decided to put a twist on this dish by serving it with chips and salsa. 

I use long-grain white rice, but you can use any rice. To make this dish a full meal, add some protein of your choice. I added roasted Paneer Chunks.  

 

 Ingredients for Rice

  • 1 cup cooked white rice. 
  • ½ cup cooked red beans. 
  •  ½ cup chopped mix peppers. 
  • 2 tbsp oil. 
  • 1 cup base sauce. 
  • (blend together 2 tomatoes, 4 pods of garlic, 1 onion) 
  • 1 tbsp chopped garlic. 
  • 1tsp cumin powder. 
  • 1 tbsp red chili powder. 
  • Salt to taste.
  1. 1 cup chopped tomato. 
  2. ½ cup chopped onion. 
  3. 1 pod garlic. 
  4. 1 tbsp chopped green chili. 
  5. ½ lemon juice. 
  6. ¼ cup coriander leaves. 
  7. Salt to taste. 
  8. Store bought/Homemade nacho chips. 

 

 Step 1
Coarsely blend all the ingredients for salsa and keep refrigerator till used.

 

 Step 2
Heat oil in a pan, add chopped garlic and sauté.

 

 Step 3
Now add the blended sauce, keep sautéing for 5 mins.

 

 Step 4
Add cumin powder, chilli powder and salt.

 

 Step 5
Now add cooked beans and peppers, mix well.

 

 Step 6
To this now add cooked rice, make sure you mix rice in the sauce.

 

 Step 7
Take a serving dish add a layer of cooked Mexican rice, if you are using any protein mix now.

 

 Step 8
Spread some chips on top and serve with salsa.
