Mexican rice is simple to make, yet packed with zesty flavors.
This rice is loaded with beans and peppers. I decided to put a twist on this dish by serving it with chips and salsa.
I use long-grain white rice, but you can use any rice. To make this dish a full meal, add some protein of your choice. I added roasted Paneer Chunks.

Step 1 |
Coarsely blend all the ingredients for salsa and keep refrigerator till used. |

Heat oil in a pan, add chopped garlic and sauté. |
Step 3 |
Now add the blended sauce, keep sautéing for 5 mins. |

Add cumin powder, chilli powder and salt. |
Step 5 |
Now add cooked beans and peppers, mix well. |
Step 6 |
To this now add cooked rice, make sure you mix rice in the sauce. |
Step 7 |
Take a serving dish add a layer of cooked Mexican rice, if you are using any protein mix now. |
Step 8 |
Spread some chips on top and serve with salsa. |
